Ingredients

  • 500 g boneless, skinless chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 1 medium onion, chopped
  • 1 cup broccoli florets
  • 1 cup carrot slices
  • 1 cup red and yellow bell peppers, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken with paprika, salt, and black pepper. Cook for 6–8 minutes until golden, then set aside.
  3. In the same skillet, melt butter and sauté the garlic and onion until fragrant.
  4. Add the carrots and cook for about 3 minutes. Add broccoli and bell peppers and stir until slightly tender.
  5. Return the chicken to the skillet, sprinkle dried oregano, and mix well. Let it cook for another 2–3 minutes so the flavors combine.
  6. Remove from heat, garnish with fresh parsley, and serve hot.
