Easy Garlic Butter Chicken with Vegetables – Quick & Healthy Dinner

Ingredients
- 500 g boneless, skinless chicken breast, cut into cubes
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, finely minced
- 1 medium onion, chopped
- 1 cup broccoli florets
- 1 cup carrot slices
- 1 cup red and yellow bell peppers, sliced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken with paprika, salt, and black pepper. Cook for 6–8 minutes until golden, then set aside.
- In the same skillet, melt butter and sauté the garlic and onion until fragrant.
- Add the carrots and cook for about 3 minutes. Add broccoli and bell peppers and stir until slightly tender.
- Return the chicken to the skillet, sprinkle dried oregano, and mix well. Let it cook for another 2–3 minutes so the flavors combine.
- Remove from heat, garnish with fresh parsley, and serve hot.
